GRAPES
Tinta Fina, (Tempranillo) from plots of limestone soils located at 885 m (885 m). altitude.
HARVEST
The grapes at optimum ripeness are harvested by hand in 15 kg boxes.
ELABORATION
Once in the winery, the grapes are sorted on a sorting table and then gently destemmed.
FERMENTATION
Alcoholic-A pre-fermentative cold maceration is carried out in an inert atmosphere to extract aromatic fruit compounds from the grapes. Fermented for 20 days at a controlled temperature of 29ºC in 17,000l truncated cone-shaped tanks. capacity. A post-fermentation maceration is carried out for 8 to 10 days. BARRELS
