SURPRISING, BARONIAL…
GRAPES
Tinta Fina (Tempranillo), Merlot and Cabernet Sauvignon.
HARVEST
Harvested at optimum ripeness, in the cool of the night with a mechanical grape harvester to preserve its freshness to the maximum.
ELABORATION
Once in the winery, the grapes go through a grain sorting table, followed by a gentle destemming and crushing.
FERMENTATION
Alcoholic – A cold maceration is carried out for 60 hours. in an inert atmosphere to extract aromatic fruit compounds from grapes. Fermented for 14 days at a controlled temperature of 22-24°C in 17,000L truncated cone-shaped tanks.
Malolactic – It remains in tank for 16 days with its fine lees, with a gentle battonage to increase its volume in the mouth.
BARRELS
Aged in French and American oak barrels for 16 weeks.
TASTING NOTES
Intense violet color with cherry red rim. Fresh nose, with aromas of cherry, plum and light touches of sweet red peppers from the Cabernet and Merlot, all enveloped by subtle undertones of roasted coffee, coconut, honey and vanilla that denote its soft passage through French and American oak. The palate is sweet, with a slightly astringent finish.
