HARVEST

FERMENTATION

Alcoholic – A 24-hour cold maceration is carried out. in an inert atmosphere to extract aromatic fruit compounds from grapes. Fermented for 12 days at a controlled temperature of 28ºC in 17,000L truncated cone-shaped tanks. The wine is macerated post-fermentation, which can take 25 days or more.
