GRAPES
Tinta Fina (Tempranillo), Merlot and Cabernet Sauvignon. Sourced from a selection of our plots in Peñafiel and Castrillo de Duero at 920m. and 870m. respectively.
HARVEST
The grapes are harvested at optimum ripeness and hand-picked into 15kg boxes. WINE MAKING: After a first selection of grapes in the vineyard, the grapes go through a grain sorting table, followed by a gentle destemming and crushing in the winery.
FERMENTATION
Alcoholic – A 24-hour cold maceration is carried out. in an inert atmosphere to extract aromatic fruit compounds from grapes. Fermented for 12 days at a controlled temperature of 28ºC in 17,000L truncated cone-shaped tanks. The wine is macerated post-fermentation, which can take 25 days or more. Malolactic – It remains in tank for 45 days with its fine lees, with a gentle battonage to increase its volume in the mouth.
BARRELS
Aged in French and American oak barrels for 15 months.
TASTING NOTES
The color of the wine is an intense cherry red with tile reflections in the background. Thick blood-colored tear that slides smoothly into the glass. The nose is intense, predominantly smoky, black spices, coconut, tobacco, vanilla and roasted with light tones of black fruits of the forest. The palate is fleshy and enveloping, with waxy nuances on the palate. A powerful but ripe tannin is perceived, while maintaining a slight freshness of fruity memory).
